Vegetarian Sausage Rolls


1 onion, roughly chopped
2 cloves garlic
1/2 cup cashews
1/2 cup breadcrumbs (type of your choice)
1/2 cup fresh basil
2 tsp paprika
Small handful of fresh oregano (or 2 tsp dried oregano)
300g organic firm tofu, roughly diced
1/2 tsp cayenne pepper
3 tblspn salt reduced soy sauce
Reduced-fat puff pastry (purchase gluten free variety if required)
1/4 cup milk (your choice)
Small sprinkle of sesame seeds

Preheat the oven to 180 C;
Place onion, garlic, cashews, breadcrumbs, herbs and spices, tofu and soy sauce into a food processor and process until the mixture sticks together;
Place pastry on a clean bench to thaw;
Slice a line down the middle of each pastry sheet, forming two pieces of pastry;
Fill the middle of each pastry sheet with the sausage roll mixture, forming a thick line down the middle of each pastry sheet, roll the excess pastry over the mixture, forming a large sausage roll;
Brush some milk over the top of each sausage roll, sprinkle with sesame seeds and slice sausage rolls into the size of your choice;
Place sausage rolls on a baking tray, lined with baking paper;
Cook in the oven for 25-30 minutes, or until the sausage rolls have turned golden brown;
