Vegetarian Pasta

Ingredients
1 capsicum, roughly chopped (any colour)
1 broccoli/bunch broccolini, chopped into florets
1 brown onion, finely sliced
2 cloves garlic, finely chopped
1 zucchini, sliced
1/2 – 1 tsp cayenne pepper (depending on how spicy you like things!)
Spaghetti pasta (wholemeal)
2 tbslp Extra Virgin Olive Oil (EVOO)
1/4 cup walnuts
Parmasan Cheese, shaved (optional)
Pepper

Method
Add water to a large saucepan and bring to the boil, add wholemeal pasta (add enough water to cook wholemeal pasta);
Add 1 tbslp EVOO to a wok over medium heat;
Add onion to the wok and cook, stirring for 3-5 minutes (until softened);
Add remaining vegetables to the wok and cook, stirring for a further 8-10 minutes (until vegetables have softened a little bit);
Add garlic to wok and cook, stirring for 1 more minute;
Place wok off the heat while you wait for pasta to cook;
Once pasta is cooked to your liking, strain pasta and add to the wok;
Mix pasta through the vegetables;
Add pepper, cayenne pepper and mix remaining EVOO through the pasta;
Serve with some shaved Parmesan, a small sprinkle of walnuts and extra splash of EVOO (if pasta is too dry);
