Spicy Baked Salmon with Asian Greens

2 fresh salmon fillets (I choose wild caught salmon when possible)
1 red chilli, finely chopped
1 tblsp fresh coriander, finely chopped
Juice of ½ lime
1 clove garlic, finely chopped/crushed
3 bunch bok choy, chopped
1 broccoli, chopped into large florets
1 tblsp soy sauce (salt reduced)

Preheat the oven to 180 C;
Place steamer on stove (ready to steam the brocolli);
Place chilli, coriander, lime juice and garlic in a bowl;
Coat salmon fillets in marinade and set aside for 5-10 minutes;
Wrap salmon fillets separately in foil and bake for roughly 15 minutes (until almost cooked through);
Once you place the salmon in the oven, start chopping the broccoli and place in steamer for 5-7 minutes (until softened slightly);
Place the chopped bok choy in wok with a small splash of olive oil and stir fry with salt reduced soy sauce for 3-5 minutes (until softened slightly);
Place the cooked salmon, broccoli and bok choy on a dinner plate and enjoy – goes really well with quinoa tabouli (check out the entree section for that recipe!)
