Quinoa Tabouleh Salad

1 cup quinoa, rinsed and drained
1 cups water
2 large tomatoes, diced
2 Lebanese cucumbers, diced
Juice ½ lemon
½ cup fresh mint, chopped
1 cup fresh parsley, chopped

Place the quinoa in a small saucepan with the water, bring to the boil;
Reduce the heat, cover and simmer for 10 minutes, or until all the water is absorbed;
Remove from heat and leave to cool;
Place the diced tomatoes, cucumbers, lemon juice, mint and parsley into a bowl;
Once quinoa is cooled, mix all ingredients together.
