3 cups wholegrain rolled oats (use gluten free variety if required)
1 cup almonds (chopped)
1 cup walnuts (chopped)
1/2 cup pepitas
1 tsp ground cinnamon
Juice of 1 orange (or the fruit of your choice)
1 tbsp olive oil (or oil of your choice)
Preheat oven to 180 C;
Add oats, chopped nuts, pepitas and cinnamon to a large mixing bowl;
Mix dry ingredients together;
Add oil and orange juice, mix well to coat dry ingredients;
Pour a thin layer of granola mixture into an oven tray, (I used two smaller trays);
Bake for 10-15 minutes, or until golden brown;
Once cooled, pour mixture into an airtight container;
Keeps fresh for up to 1 week.
