Healthy French Toast

Ingredients
2 slices bread (I love using rye or wholemeal sourdough freshly baked from The Good Loaf in Bendigo)
2 eggs (free range and organic)
1/4 tsp vanilla extract

Method
Turn on a toasted sandwich press (otherwise can cook the toast in a non-stick fry pan)
Whisk the eggs and vanilla extract into a bowl;
Dip the bread into the egg mixture until both sides are coated in the mixture;
Cook the bread in the toasted sandwich press or non-stick fry pan until golden;
Serves perfectly with fresh fruit;
