Balsamic Roasted Beets

6 fresh beetroots (medium sized)
2 tblspn balsamic vinegar
½ orange (juice of)
2 red onions
Few sprigs thyme (thyme leaves)

Preheat oven to 180 C;
Peel and chop beetroot into quarters (or 8ths depending on how big the beetroots are) add to oven proof dish;
Peel and chop red onions into quarters and add to the dish;
In a separate bowl, combine the balsamic vinegar, orange juice and thyme;
Drizzle marinade over beetroot and onion, stir to ensure beetroot and onion is well coated with the marinade;
Bake in oven for one hour;
